Peanut Butter Pyramids

Ingredients
  • 6 oz Chocolatier Vanilla Flavored Candy Wafers
  • 1 1/2 oz Chocolatier Milk Chocolate Flavored Candy Wafers
  • 1 1/2 oz (3 Tbsp) Peanut butter
  • Chocolatier Chocolate Flavored Sugar
  • 10 Peanut halves
Kitchenware
  • Chocolatier Crystal Pyramid Candy Mold
  • Chocolatier Piping Bags
  • Chocolatier Chocolate Scraper
  • Chocolatier Melting Bowls
  • Parchment paper or large bowl
Instructions
  1. Melt White Chocolate Flavored Candy Wafers according to package instructions.
  2. Fill each cavity with the Candy Wafers and tap mold on surface to remove air bubbles.
  3. Flip the mold over and empty excess onto parchment paper or into a large bowl, leaving enough to coat the cavities of the mold about 1/8 inch thick.
  4. Place mold in refrigerator for about 5 to 10 minutes or until set.
  5. Melt Milk Chocolate Flavored Candy Wafers according to package instructions.
  6. Stir peanut butter into melted Milk Chocolate Candy Wafers until combined, then cool to approximately 90°-100°F.
  7. Transfer peanut butter filling to piping bag and fill each shell, leaving about 1/8 inch from the top.
  8. Allow the filling to set at room temperature.
  9. When set, cover the filled shells with melted White Chocolate Flavored Candy Wafers either by pouring or piping on top.
  10. Tap to remove any air bubbles and scrape off excess using Chocolate Scraper.
  11. Return filled mold to refrigerator for approximately 10 minutes.
  12. Once set, flip mold upside down and tap to release candy pieces.
  13. Pipe a small drop of the melted White Chocolate Flavored Candy Wafers on top of each pyramid and top with a some of the Chocolate Flavored Sugar and a peanut half, holding in place until set.
  14. Store finished candy pieces in an air tight container and keep in a cool, dry place between 55°-70°F and humidity below 50%.
