Chipotle Cinnamon Heart Truffle

Ingredients
  • 6 oz Chocolatier Dark Chocolate Flavored Candy Wafers
  • 3 oz Chocolatier Dark Chocolate Ganache
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon chipotle chili powder (more or less depending on taste)
Kitchenware
  • Chocolatier Geometric Hearts Candy Mold
  • Chocolatier Piping Bags
  • Chocolatier Chocolate Scraper
  • Microwave-safe bowls
  • Parchment paper or large bowl
Instructions
  1. Melt Dark Chocolate Flavored Candy Wafers according to package instructions.
  2. Fill each cavity of the Geometric Hearts Candy Mold with the Dark Chocolate Flavored Candy Wafers and tap mold on surface to remove air bubbles.
  3. Flip the mold over and empty excess onto parchment paper or into a large bowl, leaving enough to coat the cavities of the mold about 1/8 inch thick.
  4. Place mold in refrigerator for about 5 to 10 minutes or until set.
  5. Gently warm Dark Chocolate Ganache according to package instructions, to approximately 90°-100°F.
  6. Stir in cinnamon and chipotle chili powder until combined.
  7. Transfer ganache to piping bag and fill each shell, leaving about 1/8 inch from the top.
  8. Allow the ganache to set at room temperature.
  9. When set, cover the filled shells with melted Dark Chocolate Flavored Candy Wafers either by pouring or piping on top.
  10. Tap to remove any air bubbles and scrape off excess using Chocolate Scraper.
  11. Return filled mold to refrigerator for approximately 10 minutes.
  12. Once set, flip mold upside down and tap to release candy pieces.
  13. Store finished candy pieces in an air tight container and keep in a cool, dry place between 55°-70°F and humidity below 50%.
